Yes, all my cookies come sealed in individual cellophane bags. They stay fresh for 2-3 weeks if kept at room temperature and out of direct sunlight. 

No, the fridge will dry them out. If you wish to keep them longer than 2 weeks, I recommend freezing them in an airtight container and taking them out to thaw naturally the night before you require them. 

I place my cookies on A4 cardboard within my packaging boxes to avoid them from moving around and crushing in the post. Although I cannot 100% guarantee they wont break, I ensure they wont move around and are nice and snug so that they make it to you in one piece.
